Peanut Butter Protein Muffins

This is one of the recipes I submitted for a contest. This was kind of a challenge because I wanted to make these as clean as possible but I also wanted them to taste as good as possible. We all know healthy food kind of sucks sometimes but these muffins don't. Probably the most useful thing I learned while experimenting to come up with this recipe was that you can directly substitute coconut oil for butter! Can I get a WHAT WHAT!!! Anyway, enjoy these healthy muffins!
